Hot & Fast (Best for Steaks)

1. Bring to room temp (20–30 min)
2. Pat dry & season generously (salt + pepper minimum)
3. Sear in a very hot cast iron with oil

  • 2–3 minutes per side for thin steaks

  • Pull at 125–130°F for medium-rare
    4. Rest 5–10 minutes
    5. Slice AGAINST the grain

Marinate First (Highly Recommended)

Because it’s lean, a marinade helps tenderize.

Marinate 4–24 hours, then grill or pan sear.
