Flavorful, lean cut from the back of the cow.  Versatile steak known for its robust, beefy flavor.

How to cook sirloin steak

- Prep

Bring steak to room temp (20–30 min)

Pat dry - Season well with salt + pepper (Optional: garlic powder, rosemary, or a light olive oil rub)

- Heat

Cast iron pan or grill over medium-high heat

Add a small amount of oil

- Cook

Sear 3–4 minutes per side

Sirloin is best medium-rare to medium (Medium-rare: ~130–135°F, Medium: ~140–145°F)

- Butter baste (recommended)

Last minute: add butter, garlic, thyme

Tilt pan and spoon butter over steak

- Rest

Rest 5–7 minutes (don’t skip—sirloin needs it)

- Slice

Slice against the grain for tenderness
