How to cook chuck steak
Pan-sear + braise
- Prep
Pat dry
Season generously with salt + pepper (Optional: dust lightly with flour for better browning)
- Sear
Heat heavy pan (cast iron/Dutch oven) over medium-high
Add oil, sear steak 3–4 min per side until deeply browned
Remove steak
- Braise
Lower heat, add onion, garlic (optional)
Deglaze with beef broth, red wine, or both (about 1–1½ cups)
Add steak back in (liquid should come halfway up)
Cover and cook (Stovetop: low simmer, 1½–2 hours, or Oven: 300°F (150°C), 2–2½ hours)
- Finish
Steak should be fork-tender
Reduce sauce if needed, finish with butter or herbs
Slow cooker
Sear steak first (don’t skip)
Add to slow cooker with broth, onions garlic
Low: 7-8 hours
Shred or slice and serve with juices
